Park Hyatt St. Kitts Private Dining Experience

We were enjoying the dining options at the Park Hyatt St. Kitts so much we decided to splurge on a Private Dining experience.

The Park Hyatt brand focuses on their food & beverage offerings, elevating local dishes with international flair.

We were chatting with Senior Restaurant Manager Vance Rawlins about his time at the nearby Four Seasons and how he used to do Chef’s Table dinners there. We asked if they did anything like that at the Park Hyatt and he said they did.

A few moments later we were discussing our options with Executive Sous Chef Daniel Hurtado and Sous Chef Rajul Kinja.

Chef Hurtado suggested he could create a menu that fused his background with Mexican cuisine with Caribbean flavors. That sounded terrific to us, and with a few suggestions on things to avoid/things we like we left it in their hands to create the menu.

Venue

They can do this as a true chef’s table in the kitchen. Or on the beach weather permitting. But it was windy while we were there so we chose one of the “pavilions” that are used as private cabanas during the day.

Here you’re surrounded by water with a waterfall cascading down from the adult swimming pool above, and you’re protected from the wind.

I thought it was a beautiful spot to enjoy dinner as evening fell over the quiet resort.

Starters

I had full confidence we’d be in for a treat after our first couple of meals at the resort, and especially after discussing the menu with the chefs.

But I also enjoyed being surprised by each course.

We started off with Spiny Lobster Tail Ceviche with Salted Cod Quesadillas. Absolutely amazing.

I loved the presentation, and the lobster was prepared and seasoned perfectly for my taste. The texture of the lobster meat with the acid from the ceviche balanced perfectly with the soft local avocados.

The quesadillas were a perfect accompaniment to the ceviche. The salted cod has a very mild taste and who doesn’t love a quesadilla?

Next Course

Next up was a Mushroom Gnocchi and, separately, Goat Water.

Both The Great House and Stone Barn (two of the hotel’s restaurants) serve a gnocchi, and they’re proud of them. The mushrooms were terrific and the gnocchi was well prepared and presented.

On Saturday nights on St. Kitts locals enjoy Goat Water as a way to mark the end of a work week.

We wanted a taste of the local cuisine and this marked the spot for sure. It comes across like a lamb stew, with dumplings in the thin-ish gravy providing starch. I thought it was a tasty window into a local favorite. But perhaps a bit heavy for the tropical weather.

Our servers suggested enjoying it all with some bread for an even more filling dish.

Main Course

We stopped short of finishing prior dishes to save room for the Wagyu Beef, Tortellini with Shrimp and Crab, and Phylo with Burnt Carrot Sauce.

They certainly didn’t skimp on the proteins here and every bit of this was excellent.

Dessert

An elevated Tres Leches with Meringues provided a delightful end to an unforgettable meal.

Closing Thoughts

Chefs Hurtado and Kinja personally presented and described each course with assistance from a terrific wait staff.

The cost of the private dinner before tax, gratuity and wine was $150 USD per person which I thought was a terrific value.

We thoroughly enjoyed the experience. It was like visiting an elusive restaurant that existed for one night only, never to be exactly the same again.
